Preheat the oven to 180°C.

Rinse the turkey inside and out, then pat dry with paper towels. Season the cavity with salt and pepper.

In a large skillet, sauté the onion, celery, and garlic until softened. Remove from heat and stir in the bread cubes, chicken broth, melted butter, dried herbs, cranberries, and pecans. Mix until well combined.

Stuff the turkey cavity loosely with the stuffing mixture. Truss the turkey with kitchen twine to hold the legs and wings close to the body.

Place the stuffed turkey in a roasting pan. Rub the outside of the turkey with olive oil and season with salt and pepper.

Roast the turkey in the preheated oven for about 3 hours, or until the internal temperature reaches 75°C when measured in the thickest part of the thigh.
